Power to the People; Superfood Bark

Here are some examples that just happen to be in my recipe:

Medjool dates are apparently great for whatever ails you. They contain fiber, carbohydrates, protein, fat, B6, niacin, folate, roboflavin, K, potassium, manganese, copper, magnesium and iron. They keep you regular while preventing diarrhea, help you lose weight, gain weight, maintain weight, fight cancer, promote heart health, protect your nerves, build muscles, energize, cure a hangover and prevent night blindness. 

Dark chocolate with 70-88% cocoa contains fiber, iron, magnesium, copper manganese, potassium, phosphorus, zinc and selenium. It’s nutritious, a great source of antioxidants, improves blood flow, lowers blood pressure, raises HDL, protects LDL, lowers your risk for heart disease, protects your skin and improves brain function.

Almonds contain protein, fat, biotin, E, manganese, copper, B2, phosphorus, magnesium, molybdenum and fiber. They reduce heart disease, lower bad cholesterol, protect your arteries, build strong bones, aid in weight loss, nourish your nerves, alkalize your body, lower your blood sugar and improve your brain.

Goji berries are thought to be the most nutritionally dense fruit on the planet. They help with diabetes, high blood pressure, fever and eye health. They come from China and you can find the dried berries at a health food store.

Hemp seeds are high in protein containing all the essential amino acids and essential fatty acids. I’ve heard they are the most nutritionally complete food source on the planet. I think I am starting to see a link here! 

Sea salt contains just as much sodium as table salt, but it is not processed like table salt. It does not have added iodine. It does contain magnesium and has a stronger flavor, so you can use less and it’s nice and crunchy.

Blah, blah, blah let’s get on with this. If you want a yummy snack that you can feel good about eating, try this recipe! If you want to present it to friends as a work of art or as a gift, make it just the way the instructions say. If you want a quick and easy treat, put everything except the chocolate in a food processor. When it’s chopped up pretty good transfer everything to a large microwave save bowl and add the chocolate. Before I un-wrap the chocolate, I whack it on the counter a few times to break it up. Microwave for a minute, stir and repeat until the chocolate is completely melted. Use a one ounce scoop to drop the chocolate onto parchment paper or into candy cups.

3: Medjool Dates

1½ T: Water

1 lb: Dark Chocolate (in pieces)

½ c: Shaved Almonds

¼ c: Goji Berries

2 T: Hemp Seeds

½ t: Sea Salt

In a large microwave save bowl smash or chop the dates and mix them with the water making a paste. Add the chocolate.  Microwave for a minute, stir and repeat until the chocolate is completely melted. Poor onto a cookie sheet lined with parchment paper and spread thin.  This will completely cover the pan. Sprinkle the remaining ingredients over the chocolate evenly. When the chocolate is set, but not hard, you can cut it.  If it hardens completely, you can just break it into pieces. I let mine sit in the fridge for an hour and then cut it.
