I have never been that fond of the ground red chili powder used to make traditional chili, but when I was introduced to green chilies, my world changed forever! I found myself searching for new ways to add green chilies to my diet. One of my all-time favorites is what I call green chili stew. This is an easy way to get in 2 servings of vegetables and one protein. Peppers contain antioxidants and capsaicin therefore, the hotter the pepper the more they contain. Some believe that the capsaicin can make you feel happy and satiated, contributing to a healthy weight and mind. Of course, you don’t have to tell your tailgating buddies that part of the story.
Green Chili Stew
1 lg Onion-Diced
2 lg Carrots-Sliced
1 T Chopped Garlic
4 c Beef Broth
2 lg Baking Potatoes-Diced
2 lbs Ground Beef
4 c Green Chilies-Diced
1 lg can Rotel
1 T Ground Black Pepper
Place all of the ingredients in a stock pot and cook on medium heat and mix together with a large metal spoon until your meat is broken up into the size you like it. Some people prefer to brown their meat first, but I like for all of the flavors to meld together. I also like the meat in tiny pieces. You can also use beef base instead of the beef broth to make a thicker stew. You can also continue to simmer the mixture until the potatoes get mushy and thicken the soup into a stew like thickness. Enjoy this chili with the same items you would use for traditional chili. I like flour tortillas with a little sharp cheddar cheese.
