Around Thanksgiving, PRIER has a traditional Thanksgiving meal which is served by the management team followed by sitting in a circle and taking turns to share what we are thankful for. Just like any family gathering, when our PRIER family gets together, there are generally a few tears. Those tears are of love and gratitude for one another. This year, many of us were thankful for our health, new family additions and our PRIER family. We started the meal with a prayer and ended it with so many of us thanking God for all of the wonderful people and things we have in our lives.
To me, Thanksgiving is the official opening of the holiday season. It is a time that is filled with sights, sounds and tastes that take up back to our childhood and the wonders of Christmas. For my family, that meant a warm kitchen filled with the smell of baking bread, and a table full of steaming bowls. There were two items that were always on the table and NEVER on my plate. For most of my adult life, I have striven to either fix or delete the food items that seemed like a waste of time. Have you guessed them yet? Cranberry relish and fruit cake just did not make any sense to me. Both came out of a tin and were just nasty! Today, I’m going to help you replace one of those items forever for your family holiday gatherings!
Cranberries are so very good for you when eaten in their whole form. They act as a barrier to bacteria; provide antioxidants, anti-inflammatory and anti-cancer benefits. My friend, Lisa Allgood’s Grandma Todd gave me this recipe. I am completely hooked! You don’t really have to measure anything, just use as much of each ingredient as you like.
1 bag Cranberries
1 lg Apple-cut in 4’s
1 T Orange Zest
1 lg Navel Orange Peeled
½ c Pecans
1 c Granulated Sugar
Place all the ingredients in a food processor and pulse until blended. Serve chilled.
